These Vegetarian Triple Stacked Nachos are an easy pantry meal the whole family will enjoy any night of the week! They can easily be made vegan or gluten free, and are truly a stand-alone meal!
12-16ozgroup beef substitute, such as Beyond Meat, Gardein, or Morning Star
2Tbspsolive oil
3-4cupsrice, cooked (I start with 1 ½ cups uncooked rice, and cook it in my rice cooker
½tspsea salt
½tspgarlic powder
½tsponion powder
Everything else:
15ozcan beans of choice, drained (my family’s favorite beans in this recipe are black beans, pinto beans, or refried beans)
12oztortilla chips, (one standard-sized bag)
6-8ozcheddar cheese, freshly grated (use vegan cheese to keep these nachos vegan)
To serve: (optional, but all are great additions!)
Tomato slices
Cilantro, minced
Hot sauce
Guacamole
Salsa
Sour cream
Jalapeños
Lettuce or spinach
Instructions
Cook the rice
Cook the rice in your rice cooker, or over the stovetop.
Make the ground beef substitute
While the rice cooks, prepare the ground beef substitute.
In a medium size skillet, add the ground beef substitute and the olive oil.
Note: if using Beyond Meat, I recommend adding ¼ tsp sea salt to the skillet. Beyond Meat ground beef always needs a little seasoning in my book!
Let the meat substitute cook in the olive oil until it is warmed through and slightly browned on the outside, about 10-12 minutes.
Make the ground beef substitute/rice mixture
Once the rice and ground beef have finished cooking, add them both to a large mixing bowl.
Now add in the salt, garlic powder, and onion powder. Mix everything together until combined, and the seasonings are evenly distributed. Taste and adjust seasonings as desired.
Compile the nachos
Lightly oil a 9x13 inch baking dish.
Now we layer the nachos! Start by spreading out 1/3 of the bag of chips in the bottom of the baking dish.
Top the chips with 1/3 of the rice mixture.
Top the rice mixture with 1/3 of the black beans.
Top the black beans with 1/3 of the cheese.
Now repeat this layering order two more times!
Cook the nachos
Preheat the oven to 375 degrees.
Cook the nachos for 10-12 minutes, until warm and the cheese has melted.
Serve and enjoy!
These Vegetarian Triple Decker Nachos are truly a stand alone meal! Top with freshly minced cilantro and sliced tomatoes. And then go crazy with your favorite sides, such as spinach (to balance the meal!), salsa, sour cream, hot sauce or guacamole.

Notes
If using Beyond Meat Beef Crumbles, I recommend adding ¼ tsp sea salt to the skillet when you cook the crumbles to bring out more flavor.Make sure to use freshly grated cheddar! I promise, grating your own cheese is well worth the effort.
